Uttar Pradesh, located in northern India, is our current food destination. It's not only the most populous state in India but also has a higher population than all but four or five countries worldwide.

 

This state has been pivotal in India's history, serving as the crux of various empires such as the Mouryas, Guptas, and Mughals. It's also revered as the birthplace of Hindu mythological deities like Rama and Krishna.

 

Interestingly, close to a third of Uttar Pradesh's population follows Islam. The state capital, Lucknow, is famous for its Nawabi cuisine, which include

s dishes like the Yakhni pulao featured on our Ala carte menu.

 

Uttar Pradesh is also a treasure trove of historical sites, including the world-renowned Taj Mahal, one of the seven wonders of the world.

 

We're excited to present four diverse dishes from this region. There's Mattar ka Nimona, a home-cooked seasonal speciality; Shalgam Gosht bought by people migrating from Pakistan to Lucknow during the partition which is a mutton dish with turnips; and two luxurious restaurant staples: Kaju Masala, a rich cashew nut curry, and Zafrani Murgh, a delicately flavoured saffron chicken curry.
