Lamb Biryani (Lamb leg off the bone) - Hyderabadi style Lamb dum biryani. 

 

If you were to pick a single dish to represent the very essence and personality of Hyderabad, it would be this one. The lamb is marinated in spices and herbs, yogurt and lemon juice. It is spread in a single layer in a flat heavy-bottomed pan, then layered with part-cooked rice, fried onions and Ghee. The pot is sealed and then slow cooked for hours. The steam from the lamb cooking cooks the rest of the rice, and the whole dish is infused with flavour.

 

Comes with a hard boiled egg as served in Hyderabad. 

 

Lamb (diced lamb leg), Onion, Yogurt, Egg, mint, rice, sunflower oil, coriander. cumin, cloves, star anise, mace, pepper powder, Ghee (Clarified butter)
